  • try this recipe, it's delicious

marinate some chicken pieces for 2-4 hours in the following (I use a mix of legs, thighs, breasts etc. on the bone)

1 cup coconut milk
1 teaspoon grated ginger
juice of 1 lime
1 teaspoon grated lemon grass
1 tablespoon fish sauce
2 teaspoons soy sauce
1 echalot or small onion grated
2 tablespoons brown sugar
sprinkle of dried red chillie (to taste)
one quarter of a sweet pineapple, cut into pieces



After marinating pour off almost all of the liquid and
Place chicken pieces in roasting pan
add pineapple pieces
Cook about 40 minutes at 180 C


or try cooking them on the barbeque
